Blueberry Sour Cream Cake Combine thoroughly and press into bottom of spring form pan: 1 ½ cups flour ½ cup sugar ½ cup butter 1 ½ teaspoons baking powder 1 egg 1-teaspoon vanilla Pour 4 cups Ruby Red Farms Blueberries evenly into pan. (2 @ 340 gram frozen packages) Combine and blend well: 2 egg yolks ½ cup sugar 1-teaspoon vanilla 1 cup sour cream 1 cup of either dry cottage cheese, marsapone cheese or cream cheese. Pour over berries. Bake at 350 degree for approximately 1 hour, or until top is golden brown. Let sit and cool before cutting. Blueberry Smoothie Yields: 1 large serving Ingredients: 1 ripe medium banana 3/4 cup fresh or frozen blueberries 1/4 cup nonfat vanilla yogurt 3/4 cup skim milk Pinch of cinnamon 1/2 cup crushed ice Combine all of the ingredients in a blender and puree until smooth.
